We're seeking a Senior Director of Operations to oversee our Piatti Brand. This position will be based out of our flagship location and home office in Mill Valley, CA. While working under Palisades Hospitality, your employment entity will be Piatti. Locations are throughout CA, with one in Seattle, WA, and two in San Antonio, TX, and will continue to expand. This is a hybrid position requiring 2 days in the office and frequent travel. Candidates must have experience overseeing multi-unit restaurant operations; relocation assistance is available.

WHAT WOULD YOU DO AS SENIOR DIRECTOR OF BRAND OPERATIONS?

The Senior Director of Brand Operations plays a key role in advancing the Piatti brand, built on a people-focused culture emphasizing quality, consistency, and creativity. Responsibilities include working with Regional Directors and General Managers to enhance service culture, food quality, and overall restaurant performance. This is a field-based role requiring travel.

The position involves significant participation in brand expansion, including pre-opening and opening activities, collaborating closely with the pre-opening team.

The ideal candidate will be an inspiring leader supporting and executing the brand's vision, capable of sparking creativity and generating new ideas across existing and future projects. Success will be measured by financial performance, guest loyalty, and employee retention and development.

ESSENTIAL FUNCTIONS:

  • Building brand strength through financial performance, KPIs, and expansion
  • Supporting and embodying a company culture aligned with Palisades' mission, vision, and values
  • Developing strategies to identify new revenue opportunities within the Piatti brand
  • Recruiting and training new leaders
  • Implementing new initiatives with support from relevant departments
  • Creating annual business plans with property leadership
  • Maintaining quality standards by setting clear expectations for General Managers and Chefs
  • Ensuring a remarkable guest dining experience
  • Collaborating across departments including Finance, Marketing, IT, and People + Culture
  • Leading portfolio-wide budgeting, forecasting, marketing, and operational planning
  • Serving as key contact for ownership groups and brand partners
  • Proactively addressing team performance issues
  • Ensuring compliance with laws, regulations, and franchise agreements
